Creamy Salmon Pasta ๐Ÿ

Ingredients:

๐Ÿ”น 8 oz (225g) pasta (fettuccine, spaghetti, or penne)
๐Ÿ”น 2 salmon fillets (skinless, about 6 oz each)
๐Ÿ”น 1 tbsp olive oil
๐Ÿ”น 2 tbsp unsalted butter
๐Ÿ”น 3 cloves garlic (minced)
๐Ÿ”น 1 cup heavy cream
๐Ÿ”น ยฝ cup grated Parmesan cheese
๐Ÿ”น ยฝ cup chicken or vegetable broth (optional for extra flavor)
๐Ÿ”น 1 tsp lemon zest
๐Ÿ”น 1 tbsp lemon juice
๐Ÿ”น 1 tsp dried oregano or Italian seasoning
๐Ÿ”น ยฝ tsp red pepper flakes (optional, for a little heat)
๐Ÿ”น Salt & black pepper to taste
๐Ÿ”น ยฝ cup baby spinach (optional, for extra greens)
๐Ÿ”น Fresh parsley & extra Parmesan for garnish


Instructions:

1๏ธโƒฃ Cook the Pasta ๐Ÿ

  • Boil salted water in a large pot and cook pasta according to package instructions. Reserve ยฝ cup of pasta water, then drain and set aside.

2๏ธโƒฃ Cook the Salmon ๐ŸŸ

  • Heat olive oil in a large pan over medium heat. Season the salmon with salt, pepper, and a little Italian seasoning.
  • Cook for about 3-4 minutes per side until golden brown and cooked through. Remove from the pan and set aside.

3๏ธโƒฃ Make the Creamy Sauce ๐Ÿฅ›

  • In the same pan, melt butter and sautรฉ minced garlic until fragrant (about 30 seconds).
  • Pour in the heavy cream and broth (if using), then add Parmesan cheese, lemon zest, and red pepper flakes. Stir well and let it simmer for 2-3 minutes.

  • Flake the salmon into bite-sized pieces and add it back to the pan. Stir in the cooked pasta, lemon juice, and spinach (if using).
